Only the best raw materials from our land and sea can provide that flavor intensity that emerge in our dishes, it is really simple, but simplicity is sometimes the most difficult thing to control. The trick is to build a direct and trusting relationship with our sources, producers, breeders, fishermen, with whom we share first of all the passion for our work. The quality of fish for example is not only due to its freshness, but from the way the fish is kept in the fishing boats, from the way it is transported and handled, everything matters, and our fishermen know it very well and for this reason they guarantee us the best catch for our dishes. The proximity of our farm on the hills of Lucca, just forty minutes away, gives us the opportunity but also the responsibility to use the highest quality products, not only in season but especially “of the day”, delivering a culinary experience strongly rooted in the place and the seasons.
